Spring-Challenge

I haven’t had a chance to add everything up in the points department for all my workouts and bonuses for the Spring Bootie Buster Challenge, but here is what my week looked like:

Monday: Shoulders, Jacks, and Abs, 30 minute elliptical workout, 20 min yoga

Tuesday: 120 min spinning class (taught 2 classes) and 30 min run

Wednesday: 1 mile run with my son, 300 Ab Workout, and 60 min yoga

Thursday: 120 min spinning classes (taught 2 classes) and 5 mile run, 20 min yoga and aerial yoga

Friday: 60 and 30 min spinning classes (taught 2 classes), 30 min stretching, 30 min run

Saturday: REST!!

Sunday: 60 min yoga, Full Body Burn

How was your week in the workout department?

Monday:  Per my son’s request we are having Spaghetti and chicken.

Tuesday:  Passover starts this day, so I’ll be making my Crock Pot Barbeque Brisket per tradition.

Thursday:  This day has turned into our weekly “breakfast-for-dinner” night, so I’m just going to stick with it for now.  I’m going to make Spinach Quiche Cups, to go along with fruit and yogurt.

Friday:  Thai Spicy Peanut Chicken Enchiladas  from Closet Cooking.  My friend, Andrea, pinned this earlier in the week and it caught my eye.  I’m looking forward to making it as my new “pin” of the week to try.

Weekend:  Crock Pot Indian Spiced Lentils from The Diva-Dish.  I’ve been craving Indian food like crazy lately.  Sadly there are no Indian restaurants anywhere near my home, so I’m going to have to make my own!

On the Menu

I’m sitting here at the Minneapolis airport at 8 pm hoping and praying that my late night flight to Minot has not been canceled due to this wonderful storm circling around Minnesota and North Dakota.  All the flights to Fargo have been canceled, but I have high hopes for my flight…at least I think I do.

Since I have a long layover, I figured I should work on our menu for this week.

Monday:  Turkey Breast Meatballs as subs or with pasta.  I’ll let hubby and son choose which.

Tuesday:  Slow Cooker Cashew Chicken from Six Sisters’ Stuff.  This is my one new “pin” recipe to try this week.  It looks yummy and easy to make!

Wednesday:  Easy Barbeque Crock Pot Beef Brisket…This is my own recipe that is a family pleaser.  I also know that I’m making two Crock Pot meals back to back, but I’ve got a majorly busy week ahead of me, and I’m going to need easy go-to meals.

Thursday:  Ah Valentines Day…I really have no clue on this one for dinner.  I’m still thinking about it, but in the words of my aunt, “Life’s too short.  Eat dessert first.”  Therefore, I’m making either a decadent buttermilk chocolate cake or molten heart chocolate cupcakes.  These are both new “pins” that I’ve never tried before.  I’m not sure which one I’ll make…I’ll let my little man decide.

Friday or Saturday:  Fish Tacos!  I know I’ll be craving some summer food after my short trip to Florida, and what is better than fish tacos!  This is my own recipe that uses tilapia, and I make a radish and mango salsa/slaw to to with it.

A Race, A Recipe, A Run

It is hard to believe that today is already Friday!  This week has been jammed pack full of things for us this week and it has totally flown by!  It still has been a fun week for us even while we were running and doing 10 things in one day.

I did my very first virtual 5K, Once Upon a Time, on 12-12-12!  I ended up alternating between running for 4 minutes and walking for 1 minute for the whole 5K.  I was going to do the run for 3 walk for 2, but I was feeling good with the 4 minute run so I stuck with it.  I wanted to stick with what I knew would work, and I had fun with it.  Sadly I was nowhere near my PR, but I’m getting back into the swing of running again, and I want to enjoy it.

On to that crock pot brisket recipe we had the first night of Hanukkah…Then a treadmill workout to help you burn off the brisketSmile  I must apologise for the picture of the brisket.  My family dug in before I could get a better pic!

I do have a little note to make when it comes to you choosing a barbeque sauce.  Please look at the ingredients in your barbeque sauce before you buy it.  A ton of barbeque sauces out there have corn syrup and it’s many variations in it.  You all know how bad corn syrup is for you, so please stay away from any sauces that contain it.  Thank you!

Easy Crock Pot/Slow Cooker Barbeque Brisket

Easy Barbeque Crock Pot Brisket

Ingredients

  • 2 1/2 – 3 1/2 lb brisket (basically as big a one as you can fit in your crock pot)
  • 1 3/4 cup BBQ sauce
  • 2 T brown sugar
  • 2 tsp Worcestershire sauce
  • 2 tsp black pepper
  • 1 1/2 tsp garlic salt
  • 1 tsp onion powder
  • 1 tsp seasoned salt
  • 1 tsp paprika
  • 1/2 teaspoon dry mustard

Directions

Combine all of the ingredients together.  Pour some of the bbq mixture in the bottom of an airtight container that is big enough to hold your brisket.  Place the brisket into the airtight container on top of some of the sauce.  Then, coat the brisket with the remaining sauce, and refrigerate overnight.  The next morning, place your brisket and sauce fat side down into your crock pot.  Cook on low for 9-10 hours.  Enjoy!

Now on to that treadmill run!!  Remember to stretch afterwards!!
